banana bread



i like to bake. i feel somewhat confident in this area of *homemakingness. (*new word for me too) one of my favorite 'things' to bake is banana bread. why? because it actually tastes pretty darn good and it is easy to make.

banana bread recipe

1/3 c butter
1 c sugar
1 tsp. vanilla
2 T. orange juice
1 tsp. lemon juice
3 ripe bananas
2 eggs
2 c. flour
1 tsp. baking soda
1/4 tsp. salt (optional)
1/4 c. walnuts (optional)
coarse sugar for topping (sugar in the raw)

preheat oven to 350 degrees.
cream butter and sugar.
add eggs and vanilla.
add bananas, orange juice, lemon juice. mix well.

in a separate bowl, combine flour, salt (optional) & baking soda. add to banana mixture.
coat 9 x 5 loaf pan with cooking spray.
add banana mixture and top with coarse sugar.
bake at 350 degrees for 1 hr. and 15 minutes. check middle with toothpick to see if done.

enjoy with butter, a good book or good company

Yes, those are craisins on the salad. We buy big bags of them at Sam's because salad is no fun without them.

I used Ken's Sweet Vidalia Onion dressing. Love that stuff.

I've got a couple other meatless recipes if you're interested. Let me know if you want them.

Oh, I forgot...

We liked the recipe I posted but found it a bit...hmmm...bland?...maybe? My friend has a very bland palate so I should have expected that.

I think if I make it again, I'll up the feta amount a bit. I was using up what I had, so no extra to toss in this time.

i love craisins especially in oatmeal cookies. next time i make a sam's run i'll have to look for a bag as i'm sure buying in bulk is a better deal.

thanks for the extra feta tip . . . i might of added more than called for to begin with . . . can you ever have too much feta? ;)

i would love some meatless recipes! i feel like i'm always making the same thing for my daughter.
